What would be better than surprising your loved ones with a home-made meal with nothing but clean ingredients and love? Well, not much, and Henkka knows that. He shared his easy and delicious artichoke lemon gnocchi recipe with us for Valentine’s Day, and we just had to come and share it with you, too. Hope you love it as much as we do!
Artichoke lemon gnocchi
400g gnocchi pasta
1can artichokes
1 lemon
0,6 dl olive oil
1 pot fresh parsley
1garlic clove
salt and pepper
parmesan cheese on top
Drain the artichokes and put on a bowl. Wash the lemon and grate on top of the artichokes. Add also the juice of lemon. Add olive oil and a little bit of salt and pepper. Split the garlic clove in two and add in. Smash the ingredients lightly, leave a little bit chunky. Mince the parsley and add in.
Cook the pasta in salted water and drain once ready. Mix in the artichoke mixture and check the taste. Serve right away with parmesan cheese.
