Fresh homemade pesto has wonderfully fresh and clean flavors. Pesto is easy to make and goes wonderfully with for example pasta, fish or bread. Pesto also goes wonderfully with boiled potatoes. Boil the potatoes, peel and cut into pieces. Add pesto and thin slices of red onion.
RECIPE
Olive oil
Bunch of basil
2 garlic cloves
1 tbsp pine nuts
1 tbsp parmesan cheese
all amounts are “around” as mentioned, add to taste
Peel the garlic cloves and crush in a mortar with olive oil until milk-like. Add the pine nuts slowly whilst crushing until thick. Similarly, add in the basil leaves whilst crushing. Add the olive oil until the pesto is a vivid green and runny. Mix in the grated parmesan cheese.
Tips! The basil leaves must be worked until small. The more pine nuts you add the softer and milder the pesto will taste. In contrary, the more garlic you add the stronger the taste will be. Taste whilst making!
