Filled flat breads

I often have a craving for Greek food, and sometimes I keep it simple and buy everything ready-made in the shop or go to a Greek restaurant, but sometimes I want to make everything myself. To my surprise, it was incredibly easy, and it’s safe to say I won’t be buying ready-made bread or tzatziki from the store again for a while.

Recipe

Flat breads

2,5 dl flour
1/2 teaspoon salt
50 g butter
2 dl milk

Combine the butter and milk in a small saucepan and heat until the butter is just melted. Combine the flour, salt, butter and milk in a bowl. Sprinkle flour on your work surface and knead the dough for a few minutes until smooth – you don’t need to knead it for long. Add more flour if the dough is too sticky. Wrap the dough in cling film and leave to rest at room temperature for about 30 minutes ( one trick is to put the dough in an oven that is not turned on, as this creates the perfect temperature for the dough). Sprinkle some flour and cut the dough into 6-8 pieces and roll each piece very thin. Heat a carbon steel or cast iron pan without oil or butter. Place one flat dough piece at a time in the pan and cook for about 1 to 1 1/2 minutes. Then flip and cook for another 45 seconds. Stack the cooked flat breads on top of each other and keep them wrapped in a kitchen towel – the moisture will help soften the surface, making them more pliable.

Tzatziki

1/2 cucumber
5 dl yoghurt
1 clove of garlic
salt
pepper
fresh mint

Wash and grate the cucumber. Put the cucumber in a cheese cloth and squeeze out all the liquid. Stir it into the yogurt along with the garlic clove (crushed). Add salt, pepper and mint to taste!

Fill the pancakes with your favorite fillings! We used pork, tomato, cucumber feta cheese and parsley!
