Now that the Finnish summer has come and gone, it is time to enjoy the darkening evenings, candles, and warm beverages.
Different sorts of pies are definitely a part of Fall, and a delicious homemade pear pie is one of my favorites – there’s just something about that mild and sophisticated taste that does it for me.
I like this recipe because you can make it your own in a variety of ways; by adding 1 tbsp of rum, or replacing pears with apples, figs, cherries, or berries, whatever you desire!
Pear Pie
100 g of room temperature butter
80 g brown sugar
120 g almond flour
30 g wheat flour
½ tsp baking powder
1 tsp cinnamon
2 tsp finely grated lemon peel
2 eggs
2 pears, peeled and cut in 4
60 g brown sugar, to mix in with the pears
Raw cane sugar to be drizzled on top of the pie
Serve with whipped cream, unflavored thick yogurt, or vanilla custard
Preheat the oven to 160 degrees and prepare a rectangle pie form. Springform pie forms will help you keep your pie intact, as it has a removable base.
Use an electric mixer to mix the room temp butter and sugar in a bowl. Add eggs, flours, baking powder, cinnamon, and grated lemon peel. Mix well.
Use a spoon to press the dough into the pie form. In a bowl, mix the pear slices with brown sugar. Press the pear slices on top of the dough and bake in the oven for 30-40 minutes, or until the dough looks ripe and golden in color. Enjoy the aroma that fills your home and your mind, you did it!
Drizzle the raw cane sugar on top of the pie and let it cool down in the pie form. Light up a candle, put on your favorite music, and pour yourself a glass of something warm and add a hint of ginger. Take a look outside, take in the colors of Fall, close your eyes, and enjoy your pie.
