Grilled peach and burrata salad

Recipe

Makes 2 portions

2 peaches
1 tablespoon of butter
1 teaspoon of sugar
2 burratas
2 handfuls of arugula
2 tbsp of pine nuts
2 tbsp of olive oil
1 tbsp of balsamic vinegar
salt
pepper

Instructions

Heat a pan or grill over medium heat and cut the peaches in half. Brush the open side of the peaches with butter and sprinkle with sugar. Grill/bake the peaches for 2-3 minutes on each side until the open edge is caramelised.

Assemble the salad, add a handful of arugula, peach pieces and 1 burrata to the plate. Top with pine nuts and drizzle with olive oil and balsamic vinegar. Top with a little crushed black pepper and salt.
