Christmas Salad
Ingredients:
Pecans
Feta or goat cheese
Pears
Apples
Pomegranate seeds
An assortment of types of salads
Dressing:
0,5 dl of extra virgin olive oil
1 tbsp of apple cider vinegar
1 tbsp of honey or maple syrup
1 rkl hunajaa tai vaahteransiirappia
1 tsp of fresh ginger (finely grated)
Salt and pepper
Fry the pecans on a pan on medium heat, until the nuts get golden edges, and the lovely aroma fills the room. Chop the nuts into small bits on a cutting board.
Spread the assortment of salad on a flat dish and place the roasted nuts and feta/goat cheese on top. Slice the pears and apples into thin slices and arrange them on top of the salad. Finish off by sprinkling the pomegranate seeds on top.
Mix the dressing ingredients together in a bowl and pour on top of the salad or serve it separately. Don’t pour the salad dressing long before serving it, as it may cause the salad to sog.
